    About 6 cups of fresh broccoli heads
    1 bag of shredded sharp/medium cheddar cheese
    Add another cheese like Dubliner for a bit of a different flavor
    4 cups of vegetable broth
    1 cup of onion, 1 cup celery, 1/2 cup carrots
    Nice heaping of garlic
    Some oil to saute garlic, onion, carrot


Makes about 6 bowls of soup.

Prep veggies. Saute onion, carrot, celery garlic. Add vegetable broth and broccoli. Cover and let boil until broccoli soft.

Put into blender, and chop/puree until all together. Transfer back into pot. Add some black pepper. Add cheese, mix. Ready to eat once cheese is melted into soup.
