    1 Tbsp. olive oil
    2 sliced shallots
    3 cloves garlic, minced
    Bell pepper, chopped coarsely
    6 oz. Lean turkey sausage
    2 Zucchini, sliced
    2 Japanese eggplant, sliced (reg. ep will do)
    Handful of fresh asparagus, ends cut off
    Red tomato, halved then sliced
    Oregano, marjoram, basil, thyme, freshly ground pepper & little salt.


Heat olive oil in skillet. Add shallots, garlic, bell pepper, turkey sausage & stir till soft. Then add the zucchini and eggplant slices, cooking till tender. Add tomato slices and herbs. Stir gently till all flavors are absorbed.
