    1 1/2 cup rolled oats
    1 1/2 cup oat bran
    3 cups 2% milk
    1 1/2 cup whole wheat flour
    3/4 cup flax meal
    1 1/2 cup Splenda
    1 Tbsp baking powder
    1/2 Tbsp baking soda
    2 Tbsp cinnamon
    1/2 Tbsp ginger
    1/2 Tbsp nutmeg
    3/4 tsp cloves
    2 1/4 cup unsweetened applesauce
    3 eggs
    300 grams chopped, pitted dates


1. Soak oats and oat bran in milk for 30 minutes to 1 hour.
2. Preheat oven to 400 F.
3. Spray muffin pans with cooking spray.
4. Combine all dry ingredients and mix until just combined.
5. Mix wet ingredients with oat/milk mixture, add in dry mix, and stir in dates. Do not overmix.
6. Spoon into muffin cups and bake for 25 minutes or until done.

Makes 24 muffins.
