Number of Servings: 6


    *Pepperidge Farm Puff Pastry Sheet Ready-to-Bake, 9 oz
    Mixed Vegetables, frozen, 1 package (10 oz)
    Chicken Breast, no skin, 16 ounces
    *imagine organic chicken broth low fat, 2 cup
    *Flour, white, .25 cup
    Onions, raw, 1 medium (2-1/2" dia)
    Olive Oil, 1.5 tbsp


Preheat oven to 400. Add Olive Oil to heavy skillet and heat. Add onions. Cook till translucent. Dice 1lb of skinless boneless chicken breast, add to onion. Cook until slightly browned. Add vegetables and chicken broth. Cook until chicken is cooked through. Remove about 1/2 to 1 cup of liquid and put in a bowl. Mix with flour until forms a paste. Mix paste in with chicken and vegetables until thick sauce develops. Add salt and pepper to taste. Put piece of puff pastry over the whole pan. Cook at 400 until pastry browned. About 15-20 mins.
