    16 ounces of dried black beans
    8 cups water
    1 tsp. salt
    1 ham bone with about 1 pound of ham meat
    1 large onion, diced
    2 celery stalks, sliced
    2 bay leaves
    1/2 tsp. black pepper

    Quick Method--
    About 2 1/2 hours before serving, rinse and sort beans in large pot. Cover with 2 inches of HOT water. Bring to boil for 2 minutes.Remove from heat. cover and let stand for 1 hour. Drain and rinse.

    or- Traditional Method-
    Put soaked and rinsed beans in 3-4 quart pot with 6 cups HOT water. Simmer gently with lid slightly tilted until tender, about 1 1/2 -2 hours.
    Once cooked add -ham bone and remaining ingredients, heat to boiling over high heat . Reduce heat to low and simmer for about 1 hour or til beans are tender, stirring occasionally. Discard Bay leaves. Remove ham bone from soup and chop up ham meat to bite sized pieces. Return meat to soup. Discard bone. With slotted spoon remove one cup of beans to small bowl and mash. return to soup and serve immediately.
