Ingredients

    • 1 small sweet onion, chopped
    • 1 26.5-oz can Bush’s black beans
    • 1 8-oz can tomato sauce
    • 3-oz crinkle cut Carrots
    • 3 10-oz cans Rotel diced tomatoes w/chilies
    • 1 packet Old E Paso Medium taco seasoning
    • 1 tbsp cumin
    • 1 tbsp chili powder
    • 24 oz (4) boneless skinless chicken breasts
    • 1 4-oz can chili peppers, chopped

Directions

Combine beans, onion, chili peppers, tomato sauce, cumin, chili powder and taco seasoning in a crock pot/slow cooker. Layer the top with carrots. Place chicken on top and cover. Cook on low for 10 hours. Half hour before serving, remove chicken and shred. Return chicken to slow cooker and stir in.

    Easy recipe, great flavor, bit of a kick but not too much. Instead of 3 cans, used 2 of Rotel. Added salt and pepper and a bit more cumin. To dress it up a bit when serving ea bowl added a dollop of low fat sour cream and low fat shredded cheddar - minimal addition to calories but so rich. - 1/21/17

    Thank you. I just made this again yesterday. I combined a new set of spices and added then, holding back the Taco Seasoning pack. That move and adding a 12 ox IPA beer made it "artisan chil!" LOL
