    Chicken, artichoke hearts, roasted red peppers, and kalamata olives


Heat the olive oil in a skillet over medium heat. Add the onions and sautee until translucent- about 5 minutes. Chop/slice/shred (whatever you prefer) the chicken, and add to the pan. When the chicken is mostly cooked, add the red peppers, olives, and canned artichoke hearts, and heat through, until the chicken is fully cooked. You can make this dish very low in fat by removing the olives (they have about one fat gram per olive), or you can add flavor (and fat!), by adding Feta cheese off heat when you serve the meal.
