Ingredients

    2 cups cranberries, coarsely chopped
    1/2 cup sugar
    3 1/2 cups whole wheat flour
    1 1/2 cup sugar
    1 tbsp baking powder
    1 tsp baking soda
    1 tsp salt
    1 cup cocoa powder
    2 eggs
    1 1/4 cups orange juice
    1/4 cup oil
    1 cup chopped walnuts

Directions

Combine cranberries and 1/2 cup sugar, set aside. Combine flour, sugar, baking powder, baking soda, salt, and cocoa powder. Beat eggs and orange juice. Add to dry ingredients stirring until just moistened. Fold in cranberries and nuts. Pour into two greased loaf pans. Bake at 350 F for 40 minutes or until cake tester comes out clean.
