Ingredients

    1 Onion
    8 oz. mushrooms
    1 carrot
    1 green or red pepper
    14 oz. can pink beans, rinsed
    14 oz. can diced tomatoes
    1 cup pumpkin puree
    1 lb lean ground beef
    1 tbsp cumin
    .5 tbsp chili powder
    1 tsp oregano
    1 tbsp lemon juice
    1 tbsp Worcestershire sauce

Directions

- In large pot, brown ground beef and break apart. Then remove meet to plate or bowl.
- Saute onions, carrots, peppers and mushrooms until soft.
- Add meat back in, and stir in spices. Let combine for 2-3 min.
- Add tomatoes, beans and pumpkin.
- Add 1.5 cups water, lemon juice and Worcestershire sauce.
- Bring to a boil, then turn down and simmer for 1 hour. (If you don't have time to do this, add less water in previous step.)

Makes around 5 2-cup servings.
