Introduction

This is adapted from a recipe I found called mexican stew. This is adapted from a recipe I found called mexican stew.
Number of Servings: 1

Ingredients

    8 oz. beef stew meat ( cut in small pcs)
    1-2oz jar of diced pimientos (drained)
    1 can diced tomatoes
    1 can butterball chicken broth
    1-1# 13 oz can white hominy (drained and rinsed)
    2 T vegetable oil
    1 med onion (chopped)
    1 t. ground cumin
    1/4 t. black pepper
    1/4 t. kosher salt
    1 clove garlic- minced

Directions

Brown beef in oil over med heat. Remove with a slotted spoon, set aside. To pan add onion and garlic. Saute until onion is tender. Stir in beef and remaining ingredients. Simmer, stirring occassionally, about 2 hrs or until beef is tender. Add water during cooking if necessary. Makes approx.8- 1/2 c.servings.. If you want it spicer you can use rotelle tomatos.
