    cooked rotini 2 servings
    .5 cup salsa
    1 cup black beans
    1 cup frozen corn
    1 14 oz can of diced tomatoes, drained
    1 serving of firm tofu, crumbled up
    1 packet 40 % reduced sodium taco seasoning


Add all ingredients, except cheese, into a casserole dish (I am using a loaf pan) and then sprinkle with cheese. Bake in a oven at 350 for 20 minutes or so.
