Ingredients

    Olive Oil, 2 tsp
    *onion, chopped, raw, 0.33 cup
    Yellow Bell Pepper, 1 serving equals 1.8 oz or about 10 strips, 1 serving
    Pacific Natural Foods Organic Low Sodium Chicken Broth, 1 cup, 1.75 serving
    Parmesan Cheese, grated, 2 tbsp
    *Harvest Grain Blend, Trader Joe’s, 4 serving

Directions

serving is about 3/4 cup of the grains, plus whatever small amount the onions & bell pepper add.

Recipe calls for red bell pepper.

heat the OO in a med pot over med-high heat. Add the onions & bell pep & cookf for 5 minutes. Stir in orzo blend & toast for a few minutes, stirring frequently.
Pour in chick broth & heat to boiling. Reduce heat to simmer & cook, covered, for 10 minutes.
Stire in Parm & serve immed.
