    11 oz ground turkey
    1/3 cup chopped onions
    1/2 cup chopped green pepper
    2/3 cup shredded zucchini
    1/2 cup chopped mushrooms
    1 cup chopped fresh spinach
    2/3 of can green chiles chopped
    1 cup green enchilada sauce
    2 tbsp light sour cream
    10 tbsp salsa
    10 small tortillas (70 cal a piece)
    2/3 cup shredded cheddar


Brown ground turkey, add veggies and cook until soft. Pour salsa and half of enchilada sauce over mixture and taste for seasoning. Add sour cream and 1/2 the cheese, mix well. Spray 8x8 pan with cooking spray and spoon small amount of enchilada sauce into bottom of the pan. Place mixture into tortillas, roll and place enchilada folded edge down into pan. Pour remaining enchilada sauce over dish and sprinkle with remaining cheese. Bake 30 minutes at 350 degrees, covered in foil (but uncover last 5 minutes).
