Introduction

Ingredients

    3 x 400g tins beans (I use kidney, butter and chick peas)
    1tbsp oil
    450g onions
    450g waxy potatoes
    1/2 level tsp caraway seeds
    4 level tbsp tomato puree
    1 level tbsp smoked paprika
    1 level tsp sugar
    2 level tbsp plain flour
    1 litre veg stock
    300ml sour cream (or greek yoghurt)
    2 tbsp chopped parsley

Directions

1. Fry the onion and potatoes in the oil for around 10 mins until golden brown
2. Add the caraway seeds, tomato puree, paprika and sugar and fry for 1 - 2 mins
3. Sprinkle in the flour and cook for 1 min then add the stock gradually and bring to the boil, stirring constantly
4. Add the beans, cover and simmer for 1 - 1 1/2 hours
5. Stir in the sour cream and parsley, season and serve.
