    1 6 ounce can Water Chestnuts, 1 serving
    Onions, raw, 1 cup, chopped
    Scallions, raw, 1 large
    Parsley, 1 cup
    Cilantro, dried, 1 tbsp
    Cider Vinegar, 3 tbsp
    Lemons, 1 fruit without seeds
    Spinach, fresh, .5 package (10 oz)
    Extra Virgin Olive Oil (lite) 1 tbs
    Brown Rice, 1 cup (cooked and cooled)
    Garlic, 3 cloves, minced
    Almonda, 1 cup, sliced


Drain can of water chestnuts and place in large mixing bowl. Shred spinach leaves and add to bowl. Combine remaining ingredients and mix thoroughly. Salt and pepper to taste.
