Introduction
I make mine Splenderized now since I am diet conscious and diabetic. But it can be made with sugar instead. The taste is the same either way (child tested - child approved)! Ingredients

1 egg
1 cup peanut butter
1 cup (or just a little over) Baking Splenda (can be the store brand)
1 teaspoon vanilla
Directions
Mix all together well and drop by spoonful onto cookie sheet sprayed with cooking spray (I use canola or olive oil). Lightly press down by hand or with the bottom of a glass to form flatten into cookie (not too thin).
Makes about 20 - 30 cookies. Bake at 350. Bake until top stops looking wet and edge begins to brown. Overbaking with these is easy so watch carefully!
Variations: Crunchy peanut butter ... 1/2 c. choc. chips ... 1/4 tsp. jam on top of each (peanut butter & jelly!)
