Introduction

I came up with this idea because, as a diabetic, I felt left out of desserts. It still needs a little tweaking but it sure is yummy as written. I came up with this idea because, as a diabetic, I felt left out of desserts. It still needs a little tweaking but it sure is yummy as written.
Number of Servings: 4

Ingredients

    1 can - Lucky Leaf Lite Apple Pie Filling, 20 oz
    4 - Mission Carb Balance Fajita size flour tortillas
    3 to 4 teaspoons - Splenda
    1 tablespoon - Cinnamon, ground
    (Mix Splenda and Cinnamon together)

Directions

Spritz one side of each tortilla with Pam or similar cooking spray.
Sprinkle with Splenda/Cinnamon mix.
Turn each tortilla over and repeat.
Take each tortilla and place it into an over-sized muffin tin. (I used the bottom of a glass to help get the tortilla into the tin).
Fill each with approximately cup of pie filling.
Sprinkle top with a little more Splenda/Cinnamon mix.
Bake at 400 degrees for 8-9 minutes.
