Introduction

Ingredients

    Chicken Breast, no skin, 16 ounces
    *Dole Pineapple Tidbits in 100 percent Pineapple Juice, 20 oz
    Onions, raw, 1 large Sliced
    Green Peppers (bell peppers), 1 cup, chopped
    Peppers, sweet, red, raw, chopped, 1 cup
    Garlic, 3 cloves (minched)
    Kikkoman Less Sodium Soy Sauce, 4 tbsp
    Olive Oil, 1 tbsp
    Kiwi Fruit, 2 fruit medium (peeled and chopped)

Directions

Drain pineapple (reserving juice). Pour pineapple juice (approximately 1/2 cup) into a large pan. Add soy sauce. Cut up chicken breast into bite sized pieces and cook in juice and soy sauce mix until done.

In another large pan, heat olive oil. Saute onions, peppers and mushrooms for 3-5 minutes. Add garlic, ginger,v pineapple and kiwi and heat through.

Chicken can be measured out into approximately 3 oz portions. Serve over rice. Add veggie/fruit mix and liquid from chicken pan as desired.

If you want to thicken the liquid, you can add a bit of cornstarch but that will change the calories as well.
