Introduction

This recipe is delicious. The flavor combination was fantastic! Original recipe is from Better Homes and Garden's "Eat Well, Lose Weight" cookbook. Made a few changes because what I had on hand. Ingredients

    20 oz round steak - trimmed of all fat, cut into 4 pieces
    1/4 tsp black pepper
    1/8 tsp salt (I used sea salt)
    2 cups baby carrots
    2 cups mushrooms (almost a whole 8 oz pkg)
    1 large onion, cut into wedges
    1 14.5 oz can Diced tomatoes w/ basil, garlic, and oregano, nsa (Del Monte's)
    3 Tbl. tomato paste
    1 tsp. Italian seasoning
    1 Tbl. Worcestershire sauce
    1 medium zucchini, halved lengthwise and cut into slices

Directions

Place meat, pepper, salt, carrots, mushrooms, and onions in slow cooker. Mix the tomatoes, tomato paste, Italian seasonings, and Worcestershire sauce together in a medium bowl. Pour over meat and vegetables in slow cooker.

Cover and cook on low- heat setting for 8 - 9 hours or 4-4.5 hours on high. Add the zucchini the last 30 minutes of cooking.
Dietary exchanges- 5 very lean meat, 3 vegetables, 1.5 fat.

This would be great served with mashed potatoes, rice or even your favorite pasta.

    Very Good
    This smells so wonderful while it is cooking! Perfect combination with brown rice under the veggies. I don't often eat beef, but this recipe is definitely going to be made again in my home! - 1/15/12
