    1 c. unbleached white flour
    1 c. unsweetened almond milk
    1 medium banana (85 g) mashed
    3 packages stevia (for 2 tbs. sweetener)
    1 tsp each vanilla and almond extract
    dash to taste cinnamon, caradamon, ginger
    pinch or two of sea salt
    1 Ener-G "egg"
    2 tsp. baking powder


Mix dry, add wet. Gently stir until smooth. Add more liquid (I used water) until batter is proper consistency - shouldn't be super runny nor super thick. Easily pourable and should spread some when it hits the pan.

Cook on preheated, lightly oiled pan. I used cast iron sprayed with a bit of cooking spray. Cook until sides are firming up and tops have bubbles forming/popping. Flip. Cook until both sides are golden brown and firm.

So delicious, I ate mine naked! You could serve with sliced bananas, fruit puree or syrup.

Makes about 8-9 good sized cakes. I used a 1/4 measuring cup to keep them uniform in size.
