1.52 breast, bone and skin removed Chicken Breast (cooked), no skin, roasted
2 cup, chopped Broccoli, cooked
4 clove Garlic
1 medium (2-1/2" dia) Onions, raw
1.04 cup Mushrooms, canned
2 cup Low Fat Cream of Mushroom Soup
You could add low fat or non fat shredded cheese if desired and it tastes good. I do this depending on how many calories I've had during the day. It's good either way.
Also be sure to salt & pepper each step o the dish. Salt & pepper when sautéing onions, then chicken. Be sure you salt the water you prepare rice in (or vegetable stock for more flavor) and then when combining all ingredients. If you are concerned by salt intake, just use a wee bit or only pepper.
Saute onions until soft. Add garlic or about 30 seconds to a minute. Saute chicken pieces until cooked through.
While you are cooking chicken, you should also be preparing rice according to package instructions, I generally use Success Boil in Bag brown rice but this is optional. You can use another brand or white rice I you prefer. Brown rice is healthier and has more fiber.
