Ingredients

    1 small ripe (but slightly firm avocado (Haas)
    The juice of one lime
    1/2 cup of any store bought salsa
    1/2 cup of chopped green pepper finely diced
    1 can (12 oz) of sweet corn (drained)
    1 cup of either cooked or canned black beans (drain and rinse if it's canned)
    1 tbsp of fresh cilantro finely chopped

Directions

Finely dice avocado and add to a large mixing bowl. Immediately juice lime and pour over diced avocado. Add salsa, beans, green pepper and corn and mix. Chill salsa for at least 1 hour before serving add fresh finely chopped cilantro to the top just before serving (some folks don't care for cilantro and this will give them the option of digging down further if they perfer not to have it. Serve with tortilla chips or as a side dish.
