    2 carrots grated
    1 onion chopped
    1 stick celery diced
    4 TBSP butter
    1 cup lentils (green dried I use goya)
    1 cinnamon stick (KEY!)
    1 tsp sea salt
    4 cups water approx


melt butter in large pot and stir in carrot, onion, and celery. cook until soft then add lentils and water, cinnamon stick, and salt. bring to a boil then lower heat & til lentils are soft and it is like a thick stew/soup. Remove cinnamon stick before serving. Great over brown rice or just straight up : ) Extra carrots are good too!
