Number of Servings: 8


    1 C Egg Substitute, any kind
    4 Eggs
    1 C Light Cottage Cheese
    1 C pepper strips
    1/2 Onions
    1 C Mushrooms
    5-2/3 C Morning Star Crumbles
    Salt and Pepper to taste
    Any spices that you like to give flavor
    1/2 C fat-free cheese (optional)
    2 T Salsa (optional)

Pre-Heat oven on High Broil. Place rack on second from the highest.

Cut up the onions, peppers, and mushrooms.
Cook with Olive Oil about 2-3 TB. Cook the peppers and onions first to the softness you like, then add the mushrooms.
Add the crumbles and while that is cook on medium heat, continue to cook the veggies and crumbles. Add all the eggs and cottage cheese mixture to a blender, blend for about 2 minutes or until all the eggs and cottage cheese are broken down or to your liking.
Pour the egg mixture over the veggies and crumbles that are still on the burner on a medium heat and start to cook the egg mixture on the stove, about 10 minutes.
Once you see only a little bit of the egg mixture is loose you then will put in the oven for about 5-7 minutes, keep watching it.
When totally solid, add the shredded cheese to the top and return to oven for about 1-2 minutes only only enough to melt the cheese.
Add salsa to the top after cooking.

Cut the frittata in 8 servings.
