    Flour, white, 0.5 cup
    Flour, whole grain, .75 cup
    Oats, 1 cup
    Brown Sugar, 0.5 cup, unpacked
    Raisins, 0.5 cup, packed
    Oil, 3 tbsp
    Egg, fresh, 1 large
    Milk, 1%, .33 cup
    Carrots, raw, shredded, 1 large (7-1/4" to 8-1/2" long)
    Banana, fresh, mashed, 1 medium (7" to 7-7/8" long)
    Coconut, raw, 0.5 cup, shredded
    Apples, fresh, shredded, 1 medium (2-3/4" dia)
    Unsweetened Apple Sauce, 0.5 cup
    Cranberries, dried, sweetened (craisins), 0.5 cup
    Walnuts, .25 cup, chopped
    Flax Seed Meal (ground flax), 4 tbsp
    baking soda 1/2t
    baking powder 1t
    nutmeg 1/2 t
    cinnamon 1/2 t
    salt 1/2t
    vanilla 1t


Mix wet ingredients in one bowl and dry ingredients in another, and fruits and nuts in another. Add wet to dry and mix until just combined, not overmixed, then fold in fruits and nuts.

Makes 12 regular muffins, or 6 texas muffins. Sprinkle tops with a bit of extra oats and brown sugar before baking. Add some crasins to the top halfway through if you like.

Bake at 400 for 20 minutes (regular size) or longer for larger muffins - cook until toothpick inserted comes out clean. Let sit in tins for 5 minutes then turn out onto a cooling rack.

Super filling and indulgent!!
