Ingredients

    2 Chicken breasts (boneless & skinless)
    2.5 c. Green beans (I used fresh)
    1 can Cream of Mushroom soup
    2 medium Yellow squash
    1 c. Milk (I used Simply Smart Fat Free milk)
    .75 c Water
    1 c. rice (I used white rice)
    4 Tbl. french fried onions (I only used for crunch and b/c I had no onions :) )
    1 Tbl. Olive oil, divided in half

Directions

Preheat oven to 350 degrees. Brown chicken on stovetop, seasoning as you want (I used salt, pepper, and an salt free herb seasoning.) Throw chicken in 9 by 16 casserole dish. Using same frying pan as you used to cook chicken, add half of olive oil, fresh green beans, and desired seasoning (I used the same as chicken) and cook over med. high heat for about 5 minutes. Throw the green green bens in the casserole dish with chicken. Cook the squash the same way as green bean (w/ rest of oil), but for 3-5 minutes. Throw the squash in th casserole dish as well. In a bowl, mix together the cream of mushroom soup, water, and milk. Once mixed well, add rice to the mixture. Then add all of that to the casserole dish. Top with french fried onions and cover TIGHTLY with foil. Bake in oven for 1 hour to 1.25 hours.

*Makes 8 1-cup servings
