Number of Servings: 6


    1 Medium Head of Cauliflower trimmed (leaves and stem cut off)
    1/2 Cup of Light Mayonnaise
    1 Cup Lowfat Cheddar Cheese
    salt & pepper to taste


1. Trim Cauliflower of leaves, cut off stim and place in a microwave safe bowl.
2. Cover tightly with lid or with cling film.
3. Microwave on high for 8-10 minutes (depending on size of cauliflower, but make sure cauliflower is done)
4. Remove lid and spread Mayonnaise first, then the cheddar cheese over the top of Cauliflower.
5. Replace lid and leave in microwave for 5 minutes. DO NOT COOK OR TURN MICROWAVE ON, just needs to set in microwave for cheese to melt.
6. Salt & pepper to taste and serve.
