Introduction

I used leftover smoked pork, shredded. Any pork will be fine. I used leftover smoked pork, shredded. Any pork will be fine.
Number of Servings: 6

Ingredients

    1 small onion, chopped
    2 cloves garlic
    16 oz chopped green chiles
    32 oz chicken broth
    2 cups shredded pork
    2 Tbsp cumin
    2 handfuls frozen corn kernels

Directions

In a large saucepan or small stock pot, pour 2-3 Tbsp chicken broth. Add chopped onion and cook until softened, adding broth as needed. Add garlic, cook about 1 min more. Add cumin and allow mixture to thicken. Slowly add chicken broth to onion mix stirring or whisking until no lumps. Add pork to stew. Add corn. Simmer on med/low heat 15-20 minutes to allow flavors to marry.
Serve with baked corn chips and cheese of choice. (I used shredded sharp cheddar)
