Delicious, relatively healthy muffins. My son loves them! Delicious, relatively healthy muffins. My son loves them!
Number of Servings: 24


    1 cup boiling water
    1/2 cup crisco
    2/3 cup sugar (I reduced from 1 1/3)
    Blend these together, then
    whisk together in a bowl:
    2 1/2 cup flour (I use whole wheat)
    2 1/2 tsp baking soda
    1/2 tsp salt
    Add dry to the sugar mixture, mix well then add
    2 cups bran
    2 cups lowfat buttermilk
    mix well.


Makes 24 small bran muffins.
Bake 400 degrees 15-20 minutes
batter will keep in fridge 2 weeks
