Ingredients

    Ingredients:
    Extra Virgin Olive Oil, 2 tbsp
    Garlic, 1-2 clove(s), crushed
    Cumin, 1 tbsp
    Pepper, red or cayenne, 1 tbsp
    Yellow Sweet Corn, Canned,, one can, with liquid
    Canned Tomatoes, one can, with liquid
    Green Chili Peppers, 1 can, with liquid
    Black Bean, 2 cans, with liquid

    1 can= 15oz (?); there should be 3.5 1/2 cup servings per can

Directions

*NOTE: Do not drain the canned goods, using the liquid in the can elilminates the need for vegetable broth.
Though you could drain and rinse the canned goods and use low-sodium broth if you wanted to cut down on the sodium.

Very simple: sautee the spices and garlic in olive oil for a few minutes, then add the beans, tomatoes, corn, and chilis, and simmer.

Makes about 9 one-cup servings
