    8 oz. dates, pitted and chopped
    1 c water, boiling
    1 c sugar
    1 egg, beaten well
    2 c flour
    1 tsp baking powder
    1 tsp baking soda
    dash salt (up to 1/2 tsp if desired)
    1 tsp vanilla
    1 Tbsp butter, melted


Chop and pit the dates. Cover with 1 cup boiling water and let sit for 5 minutes. Add sugar and egg and mix. Sift dry ingredients and add to date mixture. Beat well (by hand). Add vanilla and butter and mix in. Bake for 1.25 hours in 325 degree oven in loaf pan sprayed with Pam.
Servings: 16, 1/2 inch slices
