    I Can't Believe It's Not Butter Light (1tbs)
    Celery (1c chopped)
    Red Potatoes (3.5c chopped)
    Frozen Broccoli (10oz package)
    Swanson Vegetable Broth (2.5c)
    Water (2c)
    Velveeta 2% (.5lb)
    Seasoning of your choice (I use a little Tony's or Italian herbs)


In medium sauce pan, cook celery until slightly tender, then add potatoes, broccoli, broth, and 1c water. Boil until potatoes are slightly tender, then puree all in blender to your desired texture. Pour back into sauce pan and add additional cup of water. Bring to boil and add cheese. Simmer until cheese is melted and allow an extra 10 minutes for flavors to mix. ENJOY! You can also add carrots or corn to this, it's very flexible! If adding either, add when adding other vegetables.
