Introduction

A few years ago our family planted several zucchini plants, and as a result, had zucchini coming out of our ears. That was when I made up this recipe; it has been a family favorite ever since then, (well, except for my dad, who doesn't like terriaki) A few years ago our family planted several zucchini plants, and as a result, had zucchini coming out of our ears. That was when I made up this recipe; it has been a family favorite ever since then, (well, except for my dad, who doesn't like terriaki)

Ingredients

    18 large eggs
    2 large zucchini's chopped into small cubes
    1 medium onion cut into long strips
    5 tablespoons Yoshida's terriaki sauce
    4 tablespoons soy sauce
    1 clove garlic minced

Directions

Saute Zucchini, onions and garlic until tender. Add yoshida's and soy sauce. Let simmer on low for about 5 minutes. Strain off excess fluids and dump zucchini mixture in a large mixing bowl and set aside. In a medium bowl mix up eggs, salt and pepper to your taste and a touch of Yoshida's. Scramble eggs and add to Zucchini mixture. Mix together and serve.
