Introduction

Ingredients

    I cup cooked quinoa
    2 T packed, dried cranberries, Craisins
    1 T, (20 gms) Dry roasted almond slices
    1/2 cup Kirkland Egg Start (egg whites)
    Oil spray to coat pan

Directions

Prep time would be for cooking the quinoa. I cooked a big batch and keep it in a sealed container in the refridgerator so then there would be no prep time for this dish.

Heat pan to medium high heat. Spray with oil cooking spray. Put quinoa in pan and stir to separate. Add Crasins and toasted almonds. Pour egg whites in pan and stir lightly until cooked, scraping the bottom of the pan as you stir. Cook until eggs are done and serve.

If you serve as one serving: 470 calories. If you split into 2 servings: 235. Don't be afraid to eat as one since this is very low fat. It will carry you through the morning!
