Introduction
This is something I made up the other day wile working on ideas for home made freezer meals. This is something I made up the other day wile working on ideas for home made freezer meals.Number of Servings: 2
Ingredients
-
Chicken Breast, no skin or bones.
1 can Green Beans (or Peas)
Two little Potatoes or one big one.
Bacon Bits
Light Poppyseed & Cramelized Onion Dressing
Cottage Cheese, Nonfat
Directions
Side notes:
This takes a big pot & microwave safe dish with a lid.
If you dont know how to boil chicken its very easy.
Wash chicken with cold water.
Fill pot half way with cold water. Put the chicken breast in the water then turn heat up to medium high.
Watch until bubbles start to come up. Not boiling just the little preboil bubbles. Turn down head to medium. Set timer for 8 minutes. Take out cut it in the thickest part. if still pink put back in for two minutes. When ready pull out and let cool then cut in little cubes put in a bowl & mix with dressing.
Wile the chicken is doing its thing peel potatoes, stab with a fork a few times and put them a microwave safe dish that has been lightly buttered. Cover and microwave them for 5 minute. Then flip them over and microwave them for 4 more minutes. Let sit for 2 mins.
If still undone put them back in for a minute or two.
After your done with them put them on a plate and put the green beans in. If from a can they should only take 2 minutes.
And, your just about done.
Add to potatoes what you want (i used Cottage cheese and mixed until creamy). Likewise with the beans (I used bacon bits).
