Introduction

I had Spanakorizo in Greek Town - Detroit, MI and this was pretty darn close - not quite as good - but good nonetheless! I had Spanakorizo in Greek Town - Detroit, MI and this was pretty darn close - not quite as good - but good nonetheless!

Ingredients

    Spinach, fresh, 1.5 cup (remove)
    Red Ripe Tomatoes, 1 Italian tomato (remove)
    Onions, raw, 1 slice, medium (1/8" thick) (remove)
    *Lemon Juice, .13 cup (remove)
    Garlic, 1 clove (remove)
    *basil, dried, .5 tsp (remove)
    *MORTON Sea Salt, Fine Salt, 0.5 tsp (remove)
    Pepper, black, .5 tsp (remove)
    Olive Oil, .75 tbsp (remove)
    White Rice, long grain, 1 cup (remove)

Directions

Put a little less than a TBSP of Olive oil in the bottom of a pan, heat on Medium heat and add spinach, onions and minced garlic, while that starts simmering chop the tomato into small pieces and then add. Stir in Basil, salt and pepper. Squeeze into the pan the juice a 1/2 of a Lemon or approx 1-2 TBSP to taste and then add pre cooked rice and stir - heat through and serve.
