    1 Medium Yellow Onion
    **1/4 Cup Original Liquid Egg Substitute (such as EggBeaters)
    1/2 cup crushed FiberOne Cereal (use a blender or food processor to make the cereal into a powder - and make sure you're measuring the 1/2 cup of cereal BEFORE you blend it up!)

    **Although you’ll only actually USE a quarter cup, it may be easier to dunk the rings if you dole out a bit more Egg Beaters while preparing.


Preheat oven to 375 degrees. Cut edges off onion, and remove the outer layer. Slice the onion into 1/4" - 1/2" sections (width can be increased or decreased depending upon how large you want your rings to be). Separate the sliced sections into rings. Next, fill a small bowl (just large enough for onion rings to fit in) with egg substitute. Pour cereal crumbs onto a small dish. One by one, coat each ring in egg and then breadcrumbs (give each ring a shake after the egg bath). Place on a cookie sheet sprayed with nonstick spray. Cook for 20-25 minutes, flipping rings over about halfway through. Can be served as a side, or eaten as a healthy snack with reduced carb ketchup!

  • My very picky hub who loves fries food, was 'skeptical' and actually said to give this four stars. We have an electric stove, and his one request was to cook them longer for more crispyness. My response is that I threw away egg white and cereal, so you need a scale to accuratley calculate calories. - 7/11/08
