    50g wholemeal organinc dry spaghetti
    1 spring onion
    1 garlic clove crushed
    sprinkling of herbs/or chilli powder/curry powder whatever you prefer
    1 cup of grated carrot
    5g grated italian hard cheese (the kind you find in a sprinkle container)
    a little water


This makes 1 serving.
I don't usually fry the onion this saves on oil and hence why i'm using spring onion and not brown onions.

Put all of the ingredients (except the cheese and spaghetti) with a little water into a pan with a lid, gently bring to a boil then reduce heat and simmer for 10 mins. Meanwhile cook the spaghetti as per pack instructions.

Once cooked either pour the veggie mix on top of the spaghetti or mix together then sprinkle the cheese on top.

You can also add any other veggies you like such as chopped courgette (zucchini) peppers etc
