Introduction

A scrumptious, 'eat only one', fall treat. ; ) A scrumptious, 'eat only one', fall treat. ; )
Number of Servings: 60

Ingredients

    1/2 c. shortening
    1 1/2 c. sugar
    1 large egg
    1 c. canned pumpkin
    1 tsp. vanilla extract
    2 1/2 c. flour
    1 tsp. baking powder
    1 tsp. baking soda
    1 tsp. salt
    1 tsp. ground cinnamon
    1 tsp. ground nutmeg
    1 c. semisweet chocolate chips
    1/2 c. chopped walnuts (optional)

Directions

1. Heat oven to 350 degrees. Grease or spray cookie sheets.

2. In a mixing bowl, cream together the shortening and sugar until light and fluffy. Beat in the egg. Add the pumpkin and vanilla to the wet mix until combined.

3. In a seperate bowl, combine the flour and the next 5 ingredients. Slowly add the flour mixture to the pumpkin mixture until combined. Stir in the chocolate chips.

4. Drop teaspoons full onto cookie sheets and bake for 15 minutes or until brown. Be sure not to overbake. Makes 5 dozen.

5. Indulge and enjoy!!

    These cookies are amazing. They are delicious, fluffy, and (best of all!) pumpkin. If I make anything to bring to work, these are always it - I actually get requests for them because people love them. I always make them with white chocolate chips. - 9/17/15
