    * Canola Oil, 2 tsp
    * 1 Onion chopped
    * 2 Celery stalks diced
    * 2 Carrots, diced
    * 8 Cups Fat Free, reduced sodium chicken broth
    * 3/4 cup uncooked brown rice, long grain,
    * 1 boneless, skinless chicken breast, diced
    * 1 tsp thyme
    * 1/4 tsp black pepper
    * 1 tsp parsley
    * 1 bay leaf
    salt and pepper to taste.


1. Heat canola oil over medium-low heat in a large saucepan. Add onion, celery, and carrot and cook over medium-low heat until onion is translucent (about five minutes), stirring occasionally.
2. Add chicken broth, brown rice, chicken, herbs and pepper. Heat to boiling. Cover and reduce heat to medium low. Cook about 50 minutes, or until chicken is cooked and rice is tender. Season with salt and pepper, if desired.

Makes about 10 1-cup servings
