    2 tablespoons olive oil
    1 clove garlic, minced
    1 medium onion, chopped
    1 pound lean stew beef, fat removed and cut into 1-inch cubes
    15 ounces , drained and rinsed
    1 buttercup squash, peeled and diced
    1 turnip, peeled and diced
    1 large potato, peeled and diced
    2 stalks celery, sliced
    3 1/2 cups canned tomatoes, peeled and crushed
    2 tablespoons fresh basil, minced
    1 teaspoon freshly ground pepper
    1 1/2 teaspoons salt
    8 cups water


1.In a large skillet placed on stovetop set to medium-high heat, add oil.
2.Once the oil is hot, sear beef on all sides, turning each piece as it browns.
3.Add onions and garlic during last few minutes of searing.
4.Transfer all the seared beef, onions and garlic to the stoneware, along with the beans, squash, turnip, potato, celery, and tomatoes. Gently stir to combine ingredients.
5.Add the seasonings and pour the water over all. Mix well.
6.Place the stoneware on the slow cooker heating base.
7.Cover and cook on High for 2 hours. Turn to Low and cook an additional 4 to 6 hours. Stir occasionally and adjust seasonings as needed.

    The recipe lists "15 ounces drained and rinsed"--what is this ingredient. The directions say to add beans so I'm assuming some kind of bean? Thanks, lynn - 1/2/13

    Hi, thanks for your comment. Not sure what happened there, but yes, the missing ingredient is white kidney beans.
