Introduction

This is an exquisite Persian food that can be made with poultry or beef. I like to use it to use up my leftover holiday turkey, The prep is fairly simple, but it takes a long time to cook and can scorch so I recommend doing it in a slow cooker. If the sauce gets to thick before it gets to a dark rich brown color, add more water. It should be the consistency of a thick gravey. The meat can be cooked in the sauce, but start it earlier in the process. Raw beef cubes (1.5 x 1.5 Inches) or chicken pieces should be browned and should cook for several hours, to be very tender. Add the sweetener a bit at a time and add more or less to taste. The pomegranate molasses is quite tart and more or less can be used to taste. Adjust the sugar and pomegranate before adding any partially cooked meat or poultry. Serve over rice (not included in nutritional information). Ingredients

    4.5 C Walnut
    5 oz Pomegranate Molasses
    1 c chopped onion
    1/4 C Splenda
    1 t tumeric
    1 t salt
    1 t pepper
    8 cups of water
    4 lbs of turkey, roasted

Directions

Make 21 servings with 3 oz of turkey each

1. Place 1/3 of walnuts in blender, add 2 cups of water & blend. Repeat with remaining nuts until all are blended smooth.
2. Place in slow cooker, Add pomegranate molasses, tumeric, salt and pepper. Brown the onion in Pam and add to the Walnut-Pomegranate sauce. Cook until rich dark brown color, around 5 hours, stir occasionally and add additional water if if becomes too thick.
3. Add turkey and let simmer an additional hour.
4. Serve over basmati rice.

    This recipe makes a LOT. If you only need food enough for 1-2 people, even freezing it will be too much. Is there a smaller amount recipe available? I've had this before & loved it so having a smaller recipe would be most helpful. - 1/19/11

    Divide all ingredients in half for a smaller quantity. Because it takes so long to make, I freeze multiple containers of the sauce to have on hand to use as I need it. I cook a lot on the weekend and we use it though the week. You can also use the sauce with chicken or beef.

    Look for it in shops that sell Greek or Middle Eastern groceries. I get it at an Indian grocery that carries a few Middle Eastern items too. Also, you can order it on line.
