    1 onion, chopped
    1 teaspoon canola oil
    1 teaspoon curry powder
    1 10-ounce can condensed tomato soup
    1 14-ounce can vegetable broth
    2 tablespoons raw peanut butter
    1 tablespoon chopped fresh cilantro
    Salt & freshly ground pepper, to taste


Heat oil in a medium saucepan.

Sauté onion until softened, 3 to 5 minutes.

Stir in curry powder, stirring for 1 minute more.

Add condensed tomato soup and broth. Simmer.

Whisk in peanut butter and cilantro.

Season with salt and pepper. Serve hot.

Makes 4 servings; each serving is 1 (scant) cup.
