    100g margarine
    1/2cup firmly packed brown sugar
    1/2cup (180g) honey
    1tsp bicarb soda sifted
    50ml applesauce
    1 egg lightly beaten
    1tbspn ground ginger sifted
    1tspn mixed spice sifted
    3 cups self raising flour sifted


Place margarine, sugar & honey in a saucepan over medium heat. Cook, stirring, until sugar dissolved. Bring to the boil. Remove from heat. Stir in bicarb soda. (Do this over your large bowl or sink as the bicarb will fizz and the mixture will grow. If your saucepan is small it may overflow. Cool for kids to watch!) Transfer to large heatproof bowl. Allow to cool.

Stir in applesauce, egg, ginger, mixed spice, and flour until combined. Divide dough in half. Shape into discs. Cover with plastic wrap. Refrigerate 1 hour or until firm.

Preheat oven to 180C (160C fanforced). Line 2 trays with baking paper. Roll 1 dough disc between 2 sheets of lightly floured baking paper until 3mm thick. Using 7cm gingerbread man cutter, cut shapes from dough, rerolling dough scraps. Place on prepared trays. Repeat with remaining dough disc. Bake, 1 tray at a time, for 8 minutes or until just firm to touch. Stand on trays for 5 minutes. Transfer to a wire rack to cool completely.

Decorate if desired (remembering this will affect nutritional calculations).
