Number of Servings: 8


    1 lb lentils
    1/3C brown rice
    1 onion, chopped
    1 shallot, chopped
    2T broth
    1 10oz. package frozen chopped spinach, thawed but not drained
    about 3/4C Italian tomato sauce
    1/2t garlic powder, optional
    salt to taste


Fry the onion and shallot in the broth until just starting to turn brown. Rinse the lentils and add along with the onions and rice to 7 cups of boiling water. Simmer until barely tender, 25-30 mins. Add the spinach, tomato sauce and garlic powder and simmer another 5-10 mins. or until the rice is done.

Yields: approximately 8 one-cup servings.
