Introduction

Number of Servings: 1

Ingredients

    1 cup Egg Beaters,
    1 tablespoon Flour, white
    1 Red Potato
    1. cup Onions, chopped
    1 tbsp Parsley,
    1 clove Garlic,
    Spray Margarine or Pam canola
    2 tablespoon Lemon Juice
    2 tablespoon Milk, nonfat
    Salt and pepper to taste

Directions

1. Peel the potato, cut into cubes and boil them until they are tender . Drain the potatoes

2. Spray the Margirine for 3 seconds on a skillet and add the onions, salt, lemon, parsley, pepper and salt to the skillet. Cook until onions are carmalized

3. Add the potatoes to the skillet and brown.

4. In a sepereate bowl add the egg beaters, 1 tablespoon of flour, salt, peppers and milk. Mix until the flour is dissolved.

5. In a pyrex pie container spray the margine and the egg mixture and then drizzle the potatoe and onion mixture over the egg.

6. Cook in a pre-heated 375 oven until the eggs af fully cooked
