Introduction

There's no fish in this recipe. It's a great alternative to tuna salad. Feel free to sub out the bell pepper for celery for a more traditional recipe, I just don't like celery in my salads. Ingredients

    - 1 can chickpeas drained and rinsed
    - 1/4 small onion chopped/minced fine
    - 2 tbsp Veganaise (I use the high omega 3 version)
    - 1/4 cup chopped bell pepper (green, red, yellow, whatever!)
    - 2 tsp Dijon mustard
    - dash salt
    - .5 tsp black pepper
    - .5 tsp garlic powder

Directions

Pulse the chickpeas in a food processor until it's the flaky consistency of a canned "tuna". Stir in veganaise and all the other ingredients.

Spread on bread for sandwiches, or just eat straight up it's that good.

Stays well in an airtight container for a few days.

    Very Good
    Just mashed the chickpeas with a fork, stirred in celery, onion, pepper, lemon juice and vegenaise and it was lovely. I used only half a can of chickpeas though so I guess mayo, celery etc was all doubled. - 9/3/17

    Not bad, just a tad bit too dry for me. I added a bit of relish to wet it some. Will make again. - 5/3/16
