    1 pound ricotta original
    2 large eggs, lightly beaten
    1/4 cup Splenda
    Juice from 1/2 lemon
    .25 tsp. vanilla extract
    3 TBS. coconut milk powder mix
    3 TBS. water


Makes 8 servings.

Pre-heat oven 375 degrees.
In a large bowl, mix all ingredients very well.
Pour into pie dish sprayed with PAM.
Bake for 40-45 minutes, until toothpick comes out clean. Let stand for 10-15 minutes to cool, then serve.
