Introduction

Ingredients

1 10oz package fresh spinach leaves
1/2 cup lite sour cream
1/2 cup shredded pepperjack cheese
4 galic cloves, minced
4 skinless chicken breasts pounded to 1/2 in thickness
8 slices of bacon
Directions
1. Preheat oven to 375 F (190 C)
2. Place spinich in a large glass bowl and microwave for 3 minutes, stirring every minute or so or until wilted. Stir in sour cream, pepperjack cheese and garlic.
3. Lay chicken breasts out on a clean surface and spoon some mixture into each one. Roll up checken to enclose the spinach mixture, and wrap with 2 slices of bacon. Secure with toothpicks ,if necessary, and arrange in a sahllow baking dish.
4. Bake uncovered in preheated oven for 35 minutes, then increase heat to 500F (260 C), or use the oven's broiler to cook for an additional 5-10 minutes to brown the bacon.
