Introduction
These delicious muffins are a great addition to any breakfast, or fine on their own as a snack. They aren't exactly low-fat, but they are a lot healthier than store bought muffins, which tend to be basically cupcakes. The original recipe said to use 1/2 cup nuts and 1/2 cup mini-chocolate chips, but the apple and raisin are a healthier alternative. These are very versatile. Ingredients

1/2 cup butter or margarine, softened
1/2 cup brown sugar, packed
2 very ripe bananas, mashed
1/4 cup milk
1 tsp vanilla extract (can use another extract of your choice)
2 eggs
1 cup whole wheat flour
1 cup all-purpose flour
1 tsp baking powder
1 tsp baking soda
1/8 tsp salt
1/2 cup raisins
1/2 cup apple, finely chopped
Directions
1) Preheat oven to 375 F. Grease muffin tin or line with paper liners.
2) Cream together brown sugar and butter in a large bowl.
3) Add in mashed banana, milk, vanilla, and eggs. Blend well.
4) Add both flours, baking powder, baking soda, and salt. Stir only until flour is barely incorporated. Add raisins and apple, and mix in. Do not over mix! Leave batter slightly lumpy. Fill each muffin tin 2/3 full.
5) Bake in oven for 20 - 25 minutes. Muffins are done when a toothpick inserted in the centre comes out clean.
